October 8, 201311 yr Lyon, nice soup. You always make everything look so tidy, it is quite professional! You know, I've seen Japanese and Korean entrepreneurs attempt to set up fast food soup restaurants but they've had mixed success. There are a few in congested areas like Koreatown, NYC but otherwise I haven't seen the type of soup shops I've seen in Japan make much an entry here. That looks like: - bbq pork - Chicken egg (or duck egg?) - seaweed - green onions Is that soup base miso?? October 8, 201311 yr You are right and it was soft boiled chicken egg And I cheated a bit, I didn't made the soup myself, I bought a pack of instant ramen with seasoning packet inside But that flavor is pretty close to the soup in Japanese restaurant!
