I have a significant amount myself but mine has always been of a slow and steady increaes.

 

The hormones of stress is like an acid in a battery & the melanin -pigments for you hair, skin, etc- is "used" faster when you are under a lot of stress.

So yes, stress can gray hair faster. But not in one night or after a shock like we see in the movies.
